Join our resident French Chef Zoé for an evening in the kitchen reimagining the traditional Thanksgiving meal for vegetarians with a French twist! Many French classics actually start with a vegetarian base. Whether you are cooking for a group or a party of 1, this menu celebrates vegetables as the main course and embodies the comforting dishes we all crave around Thanksgiving!

Vin Chaud – Spiced Red Wine
Velouté de Potiron – Velvety Pumpkin Soup
Tian – Vegetable Layered Tian of Eggplant, Tomatoes, Potatoes, Zucchini, Garlic, Thyme, Oregano & Gruyère Cheese
Haricots Vert aux Beurre D’Escargot – Green Beans with “Snail” Butter
Fennel & Endive Salad with Almonds, Parsley, Lemon & Parmesan (Demo only. Recipe will be provided, but no need for students make during class time)

Zoé McLaughlin was born in Paris and raised in San Francisco. She graduated from Le Cordon Bleu in Paris and worked in restaurants in France while she wrote and published her first cookbook – a collection of family recipes influenced by her multicultural upbringing. She now lives in San Francisco, where she works in the non-profit culinary world and hosts online cooking demonstrations.
